Hi guys! Since I don’t have many Halloween decorations up in our house, I decided to get a bit festive by making these super simple Turkey Stuffed Halloween Peppers. Not only are they extremely cute and easy to make, but also delicious. I rarely make stuffed peppers at home, but after seeing these around social media, I HAD to give them a try! I did my own style of filling, which was very similar to a turkey chili, but instead I added white rice to the mix. Julianna got a kick out of them and even wanted to kiss them. LOL
Here’s my recipe, I hope you like them!
For the Turkey Filling
1 lb of ground turkey
6 orange bell peppers
1 small onion (diced in cubes)
2 cloves of garlic (minced)
1 ½ teaspoons of olive oil
1 cup of chicken broth
1 small can of crushed tomatoes
2 tablespoons of chili powder
½ teaspoon of paprika
½ teaspoon of dried oregano
½ teaspoon of cayenne pepper
½ teaspoon of ground cumin
½ teaspoon of salt
½ teaspoon of black pepper
1 tablespoon of sugar
1 tablespoon of Worcestershire sauce
1 cup of cooked white basmati rice
Pre-heat the oven at 350 degrees F.
Heat the olive oil in a large pot over medium heat. Place turkey in the pot, and cook until evenly brown. Stir in onion, and cook until tender.
Pour chicken broth into the pot. Mix in tomatoes and garlic. Season with chili powder, paprika, oregano, cayenne pepper, cumin, salt, sugar, Worcestershire sauce and black pepper. Bring to a boil. Reduce heat to low, cover, and simmer 30 minutes.
In the meantime, cut the top part of the bell peppers and clean the inside by removing the seeds from them. Leave the tops and bottoms separately (but make sure to cook both of them).
Once the turkey is done, place in a bowl and mix in the cooked rice. Stuff the orange bell peppers with this filling and place in the over (without the tops on top, just placed on the side of the pan) for about 35-40 minutes or until the bell peppers are tender. Once they are done, sprinkle them with some Parmesan cheese and place them back in the oven until the cheese has melted.
Once you’re ready to serve them, make sure to put their little tops on and voila! Enjoy!
