Key Lime Pie Pops

You guys! I made these super easy Key Lime Pie Pops for my husband on Father’s Day and they were a hit. They were so simple to make and so easy to eat too. Plus! Portion control. Hello!

Makes 12 Pops

Pie Crust:

1 cup of Graham crackers finely crushed

2 tablespoons of sugar (I used brown sugar)

A pinch of salt

2 tablespoons of melted butter


3 egg yolks 

14 oz. of condensed milk 

1/2 cup of lime juice

A pinch of salt

2 cups of melted chocolate


Preheat the oven to 350 F

Combine the pie crust ingredients in a medium bowl and mix well. 

In a paper cup-lined muffin tin (I used a cupcake tin), add 1 tablespoon of pie crust and add firmy with fingers. Set aside. 

In a medium bowl whisk egg yolks, condensed milk, and a pinch of salt. Add in the lime juice and combine well. 

Scoop the filling onto the crust in the tin about 1/4 of a cup each. 

Bake in preheated oven for 15 min. Cool to room temperature. 

Freeze for 2 hours.

Peel off the paper liners and insert a wooden popsticle stick in each one. 

Freeze for 30 min. 

Dip frozen key lime pie pops into melted chocolate (I opted out of this option, but I’m sure it’s delicious too!) 

Put them on parchment paper- lined baking sheet (as shown below) and freeze for 15 minutes or until chocolate is set. Enjoy!
